Another courgette

The idea of this mini cake came to me during the summer, when I was desperate to use the huge amount of courgettes my vegetable garden produced. With the courgettes its always the same. Every year, when the first ones  come along I’m very excited, I also start to make recipes with the courgette flower  , after a month  I’ve had enough and so I have to think of something else to do.  … .. The experiment worked, the flavor is very fresh, the mint leaves and  chives do their job. I know that courgettes are not in season now ,but you need only two of them, so it’s worth to invest one euro !   I’m sure you will be pleased.

Serves 6
feta cheese
2 courgettes
2 eggs
Mint leaves
Chives
Salt and pepper
knob of butter
sesame seeds

How it works:
In a medium container grate the zucchini, squeeze the grated courgettes to  get rid of the excess  water. Add the eggs already beaten, Feta cheese cut into cubes, mint and chives, finely chopped. A pinch of salt and pepper. Grease with butter 6 small containers and sprinkle with sesame seeds, pour in the courgette mixture  and bake in the oven at 180 degrees for 15 minutes. Serve hot, but they are good even at room temperature.
