Serves 6
450 grams of fish flesh white and firm (like cod)
3 tablespoons cornstarch or rice flour
1 tablespoon fish sauce
1 beaten egg
15 grams coriander leaves
3 tablespoons red curry sauce
100 grams green beans sliced very thin
2 onions, finely chopped
125 ml of peanut oil or sunflower
1-2 teaspoons hot pepper finely chopped (optional)
How it works:
Finely chop the fish into a blender. Combine the rice, fish sauce, egg, coriander, curry and chilli and blend for 10 seconds. Transfer the mixture into a bowl, add the beans and onions and stir. Removed 2 tablespoons of mixture and with wet hands, form patties dishes.
Heat oil and fry the patties, drain them and pass them on paper towels.
