My mood has not changed, maybe it’s the sun, the heat and fatigue to working in the garden. But for today I thought to make a quick finger food that once prepared can go in the fridge. Ready for 7.00 p.m. when a glass of chilled white wine is waiting for me and the only thing I want to do is relax! So if you are in the same mood … try it …. Good and fresh surrounded with salad leaves ( used because I have a lot of salad in my vegetable garden at the moment) . Lets relax when we can! A good weekend to you all.
Serves 4
100 grams ham
250 grams chickpeas (cooked)
1 tablespoon grated Parmesan cheese
4 fresh mint leaves
1 teaspoon fresh rosemary
Evo Oil
Salt
5 leaves of lettuce (or poppy seeds)
How it works:
Put all ingredients in blender and mix. If necessary add evo oil to have a good consistency. Form small balls with your hands. Rap around the shredded salad leaves. Or if you do not want to use salad cover the tip of the ball with poppy seeds. Keep in refrigerator. Take it out from the refrigerator 1 hour before serving.
