This recipe comes from Turkey! There are very few things you need to prepare it: an eggplant, garlic, lemon juice, olive oil, coriander or parsley and finally the Thaina sauce, very important for a successful outcome. Once you have done few slices of toasted bread then you are ready to eat it. For those of you who’ve never eaten you a must try!

Serves 4
6 eggplants (long ones)
4 tablespoons Thaina
Juice of ½ lemon
1 garlic
Sale
EVO oil
coriander or parsley

How does it work:
Prick the eggplants with a fork and then put them in a baking dish and cook in the oven for 50/60 minutes. When touching the eggplant with a finger, will remain soft to the touch .. are ready. Once cold cut in half lengthwise, remove the pulp with a spoon inside of eggplants, pour the pulp of all the eggplants in one ditches. Pressure to release the juice. Reduce garlic mash with the garlic press or cut it very fine. In a bowl combine all ingredients and mix well with a fork. Sprinkle with a little EVO oil and with the parsley or coriander leaves chopped finely. Serve with bread.
