I do not know if it happens to you too, but to me there are some days that in my mind I build up combinations of ingredients … … … and the more I think about this the more I feel like trying if it works. This Linguine pasta is a combination of sweet and salty, it’s a fusion of caramelized red onions cook in white wine and honey, combined with the salty taste of anchovy. Very important is also to add the black olives, parsley finely chopped and a pinch of white pepper. I must say that the majority of these ingredients such as onions, olives, parsley, wine and honey are all zero-kilometer, meaning that they are home grown or they come from local producers like this honey. This is a great fortune.
So any way …. I really liked this pasta and not just me … .. I had good marks even by Nick!
Ingredients for 2 people
200 grams linguine pasta (or spaghetti)
20 grams butter
4 anchovies in oil
10 black olives
2 small red onions
Dry white wine
1 tablespoon honey
1 tablespoon grated pecorino cheese
Finely chopped parsley
White pepper
How it works:
Melt the butter in a pan add anchovies and the olives without the stone. Cook over a low heat for 1 minute, stir and add the onions cut into thin slices. Cook until the onions are softened and add wine, enough to cover the onions. When the wine starts to boil, add honey and cook with the lid until the wine has partially evaporated (10/13 minutes). Cook linguine pasta, al dente, and add the pasta in the pan with the onions, mix for one minute .Add the parsley, pecorino cheese and a pinch of white pepper. Serve
