When I was little my mother used to make this simple cake very often, usually she would start preparing it after lunch. The idea was ,once the cake was baked and patiently left to cool, a slice was cut for us young children to be eaten after dinner. Her plan was then to leave the cake for our breakfast … … …, but clearly things were never happened like this! The smell of the cake was everywhere in the house and once it was out of the oven and still bakig hot the first to taste it was Riccardo (my eldest brother) , then Pierpaolo (my middle brother) and then me ( the youngest.) Half the cake was already gone! Once the cake was cold we were attacking again … .. by now three quarters were gone. But to my horror came the moment when the conscientious Riccardo stopped us and said – Come on we must leave a slice for our parents !!!-. Yes I know we were really good children.
I made the cake in these days, I made mono portions, but the result is always the same … … .., this cake never arrives to the morning!
Ingredients
3 apples (Pippin if is possible)
250 grams flour
125 grams sugar
125 grams butter
3 eggs
150 grams milk
7 grams baking powder
Grated peel of 1 lemon
a pinch of salt
1 tablespoon brown sugar , 1 teaspoon cinnamon
How it works:
Cut the apples into cubes (without skin) and set aside. Using the mixer put together the butter (soft) and sugar, mix for one minute and add the peel of lemon , cinnamon and the eggs one at a time. Sift together flour and baking powder and add to the mixture, after add the pinch of salt and milk. Once everything is well blended, pour the batter into the baking tray (greased ). Remember the cake will grow, so fill the baking tray up to the middle. Pour over the batter the apple cubes and push them down. Sprinkle over the brown sugar and bake at 180 degrees for 45-50 minutes.
