These were the last of my sun dried tomatoes . Last summer I planted 60 tomato plants, a large part we eat during the summer ,with another part I made jars of tomato passata and some were made into sun-dried tomatoes. Now the stocks are running out and the cycle is about to start again. For this finger food I wanted something refreshing ,something that could give a welcome to spring. So a simple thing, burrata cheese, basil and sundried tomatoes, my last!
Ingredients for 7 tablespoons
10 dried tomatoes
10 basil
100 grams of burrata cheese (buffalo mozzarella instead)
white pepper
salt
evo oil
How it works:
Break with your hands the cheese and combine three sun-dried tomatoes and three basil leaves finely chopped with it . A drop of evo oil and a pinch of black pepper. Lay the finger food using one basil leave and one sun dried tomatoes for it.
