In the Italian tradition frittura is a delicacy that does not require expensive ingredients. We us vegetables such as cauliflower, zucchini, eggplants and many others . Then there is the fish, but only certain types , in parts of Italy they also fry just the batter, it’s called Clouds –Nuvole-, because in reality there’s nothing in side! Considering that we like to fry everything , I decided to make fried prawns , of course I used the frozen variety, because I prefer to eat fresh one in other ways … I’m not crazy! To give this dish an extra touch I added some sesame seeds. served these lovely prawns with chilled white wine as an aperitif, because frankly they would never last till dinner …. capisci?
Ingredients
200g flour
400g prawns
yeast 5g
Sesame blond
vegetable oil for frying
salt
How it works:
Melt 5g yeast in ½ cup warm water, pour over 200g of flour, stir and dilute with more water until a thick batter is obtained (but not compact!). Cover and let rise at room temperature for 1 hour and a half. Shell the prawns leaving only the tail. Take by the tail and dip in batter, sprinkle with a little sesame seeds and fry in oil until they are lightly golden, let drain on paper towel and salt.
